🐑 Boiled Lamb and Soup from a Single Bone

Making a rich and satisfying lunch doesn’t have to require a lot of ingredients. From one lamb bone with some meat, you can prepare three meals in one — tender boiled lamb, a comforting soup, and a flavorful broth that you can freeze and use later for sauces or stews.

🧂 Ingredients:

  • 1 kg lamb bone with meat
  • 100 g onion
  • 50 g carrot
  • 100 g celery
  • Salt and pepper
  • A little oil
  • Water (about 2.5 liters)
  • Homemade noodles and parsley for the soup

👩‍🍳 Preparation Steps:

I. In a large pot, heat some oil and sauté the chopped onion for about 10 minutes.
Add the lamb bone and sear it for 5 minutes to release flavor.
Pour in about 2.5 liters of water, just enough to cover the meat.
Add the carrot, celery, salt, and pepper, then cook for about 90 minutes, until the meat becomes tender.

II. Remove the lamb bone and separate the meat from the bone.

III. Strain the cooking liquid to remove any residue.

IV. Take one portion of the strained broth, mix it with the cooked vegetables (mashed), and save it as a lamb broth or creamy soup base — ideal for freezing and using later.

V. For the main soup, pour the remaining broth into a clean pot, add some water (same amount as the strained broth), season with a pinch of vegeta, pepper, and chopped parsley.
When it starts boiling, add the homemade noodles and cook for about 10 minutes.

🍽️ Serving Suggestion:

Serve the tender boiled lamb meat with a little salt and olive oil on the side, and enjoy the clear soup with noodles as a perfect warm starter.
The extra broth can be stored in the freezer and later used to enrich risottos, sauces, or vegetable soups.
